Ingredients

Chicken marinade
450g mini chicken fillets or 2 large chicken breast flattened and cut into smaller fillets (3 per breast)
3 tbsp honey
4 tbsp soy
1/2 tsp ground cumin
2 tsp curry paste
Chicken sauce
2 tbsp sweet chilli sauce
Juice of 1 lime
2 heaped tbsp of crunchy peanut butter
2 tbsp of hot water
Quinoa salad
150g quinoa
450ml chicken stock
3 tomato’s chopped
1/2 cucumber chopped
1/2 red onion
Pomegranate seeds
Feta cheese
Mint
2 tbsp Olive oil
Juice of 1/2 lemon
1 tsp white wine vinegar
Salt and pepper
