*3/4lb of baby spinach cut into 1/2 inch strips
* 6 large mushrooms, trimmed, wiped clean, and sliced thin (about 2 cups)
* 6 strip[s of bacon cut crosswise into 1/2 inch strips
* Salt
* Freshly ground pepper
* 3 Tbsps red wine vinegar
* 2 Tbsps Extra Virgin Olive Oil
